A fragrant mild Thai curry with coconut milk, onions, potatoes and peanuts or cashews
For non-meat eaters - vegetables, tofu or plant protein can be substituted in most recipes. Adjust cooking times accordingly.
Spices: Ground ginger, ground cumin, lemongrass, turmeric, paprika, coriander, salt, cayenne pepper, nutmeg, plus an extra packet of chili powder
Prep time: 20 mins. Cook time: 45 minutes for chicken, 1-1 ½ hours for beef ~ Serves 4-6
