We’ve bought coffee directly from Bryan Bautista for three years now, a third-generation farmer whose family has grown coffee in Marcala for more than 50 years. His washed lot is the clean, classic version of what he does best: bright golden raisin, a brown sugar sweetness, and a faint almond note underneath. This is the All-Star series at its purest- no gimmicks, just Bryan’s most dialed-in work from this year’s harvest.

Tasting Notes: Golden Raisin ⋅ Brown Sugar ⋅ Almond

  • Roast level: Light
  • Process: Washed
  • Marcala, La Paz, Honduras
  • Altitude: 1600 msal
  • Varietal: Catuai, Bourbon

Brewing Recommendations:

A pour over is perfect for bringing out the bright golden raisin notes and brown sugar sweetness. Still searching for those notes in a crunch? Dial in your auto-drip machine, and still extract the clean sweetness of this unique microlot.

How’d We Get These Notes?

When picking flavor notes, we want to evaluate your experience from start to finish. For this washed-processed microlot, we found golden raisin and almond in the smell, golden raisin in the taste, and overall sweetness and body reminded us of brown sugar.

Microlot Magic:

Each microlot that is part of our All-Star program is specifically selected for its craft and the producer’s attention to detail. This results in higher prices and more of that price going directly to the farmer.

Meet Bryan Bautista

Bryan is a third- generation farmer who took over his family’s farm after university. His family has been dedicated to coffee farming for several generations, spanning over 50 years of production. The farm is roughly 26 hectares of active cultivation, including 1 hectare that’s protected forest. This protected land preserves a natural source of clean water. Bryan himself is a master of coffee processing and chooses how to process his coffee on a lot-by-lot basis.

When not on the farm, Bryan enjoys being on the soccer pitch. He’s played his whole life, including his time at university. Now he owns his own soccer team to give kids access to the sport he loves.
