Bryan Bautista is a third-generation farmer, growing coffee on the same ground his family has been farming for more than 50 years. For three of those years, he’s sold microlot directly to us. This natural is where that decades long experience shows: jammy cherry sweetness with a sharp snap underneath. This is what the All-Star series is about- Bryan’s expertise on display, as he crafts truly unique coffees.

Tasting Notes: Cherry Jam ⋅ Ginger ⋅ Citrus

  • Roast level: Light
  • Process: Natural
  • Marcala, La Paz, Honduras
  • Altitude: 1600 msal
  • Varietal: Bourbon

Brewing Recommendations:

A pour over is perfect for bringing out those big cherry jam notes and layered the ginger citrus snap underneath. Still searching for those notes in a crunch? Dial in your auto-drip machine and get the big fruit with a slightly less snap to finish.

How’d We Get These Notes?

When picking flavor notes, we want to evaluate your experience from start to finish. For this natural-processed microlot, we found immediate cherry notes throughout the cup. The mouthfeel is jammy, hence our big cherry-jam note. As we finished our sip, we noticed a nice snap that reminded us of ginger, ending with a citrus note on the palate.

Microlot Magic:

Each microlot that is part of our All-Star program is specifically selected for its craft and the producer’s attention to detail. This results in higher prices and more of that price going directly to the farmer.

Meet Bryan Bautista

Bryan is a third- generation farmer who took over his family’s farm after university. His family has been dedicated to coffee farming for several generations, spanning over 50 years of production. The farm is roughly 26 hectares of active cultivation, including 1 hectare that’s protected forest. This protected land preserves a natural source of clean water. Bryan himself is a master of coffee processing and chooses how to process his coffee on a lot-by-lot basis.

When not on the farm, Bryan enjoys being on the soccer pitch. He’s played his whole life, including his time at university. Now he owns his own soccer team to give kids access to the sport he loves.
