Bryan decides how every lot on his family’s farm gets processed, cherry by cherry. This year, he chose to honey-process this amazing Bourbon. The result: a tropical dessert, sweet and layered in a way washed or natural coffee can’t get to. This is exactly the kind of coffee the All-Star series exists to find- the one lot that stands apart from everything else on the farm.

Brewing Recommendations:

A pour over is perfect for bringing out the pineapple upside-down cake essence in this microlot. Still searching for those notes in a crunch? Dial in your auto-drip machine, and still get the sweetness and nuance of this tropical delight.

How’d We Get These Notes?

When picking flavor notes, we want to evaluate your experience from start to finish. For this honey-processed microlot, we found sweet pineapple notes throughout the cup with a nuanced cherry finish. When diving deeper, we found the sweetness to be cane sugar-like in the mouthfeel and overall cup character.

Microlot Magic:

Each microlot that is part of our All-Star program is specifically selected for its craft and the producer’s attention to detail. This results in higher prices and more of that price going directly to the farmer.

Meet Bryan Bautista

Bryan is a third- generation farmer who took over his family’s farm after university. His family has been dedicated to coffee farming for several generations, spanning over 50 years of production. The farm is roughly 26 hectares of active cultivation, including 1 hectare that’s protected forest. This protected land preserves a natural source of clean water. Bryan himself is a master of coffee processing and chooses how to process his coffee on a lot-by-lot basis.

When not on the farm, Bryan enjoys being on the soccer pitch. He’s played his whole life, including his time at university. Now he owns his own soccer team to give kids access to the sport he loves.
