For non-meat eaters - vegetables, tofu or plant protein can be substituted in most recipes. Adjust cooking times accordingly.
Spices: Salt, ground cumin, ground ginger, turmeric, chili powder, mustard seeds, curry leaves, cinnamon stick, cayenne pepper, plus an extra packet of chili powder
